well,well,well.Its been a record hot summer with a record amount of cyclists on the street.Be it mountainbikers,BMXers,road,or fixed,male or female,everyone is taking advantage of the weather.Nothin wrong with rekindling your old bike riding days in college or high school.Like it or not,cycling is definately here!

The Trip

Well,well,well,it's about that time yall!I got about 2 weeks left till food research trip begins.Everything is looking pretty good so far.Gonna pack this week,put up the blog this week, and also post the first "On the road with T"video on Facebook.First stop will be Cairo for eleven days.Then off to Berlin,Germany and then off to the Netherlands.Yeah i know that the first thing that comes most minds are the pyramids,and i do want to see them.But first thing first.FOOD!FOOD!FOOD!Stuffed pigeon,lamb,Koshari,markets,mounds of spices and much more!Man i can't wait to get out of here!Can't i leave this weekend?But that's alright I'll be patient.It'll be hot while I'm there but I'm not trippin,this trip is for a few reasons;first and foremost the food,second the culture,third,to show the younger generation that traveling is fun and there is alot to learn outside the TV,fourth for all my friends that may never get a chance to see the world I'll do it for them,and lastly for me of course!I've always wanted to see whats going on outside this country, and why not go and see,meet new people,make new friends and of course try all that new food that's out there!So sit back enjoy the travels with ya boy T and we'll talk soon.Peace and blessings.

COUNTING DOWN THE DAYS

Well its getting close to my trip and feeling very nervous!But i got my shots ,got my backpack,cameras,and on and on and on.I'll be staying at a hostel for the beginning of the trip and hopefully then find a family to stay with and enjoy some great egyptian cuisine.Passport,check.Itenerary,not so check ,but working on it check.I'll finally get my packin finished and start workin on my germany itenerary together.i think a tattoo,learning how to make sausage sounds like fun.What do you guys think about that?

That's the first thing that comes to my mind when i think of this country.With a combination of lush green lands and a mixture of Indians and Trinis creating some unique, great tasting meals.Oh ok! Yes carnival is also another great reason to go there,with the colorful, extravagant costumes, unique dance along with positive vibes and sounds of bottles,steel drums, and congos creating an upbeat lively all night mood.So the first thing you need to do if you can't make it to Trinidad, is to visit Pam's Kitchen.On the corner of 50th and University Ave. is a culinary haven of excellent caribbean cuisine. Known for its "ROTI" which is a pan fried bread that comes in two forms.One is the "Paratha" which is a buttery, flaky, hot croissant texture or the "Dahlpurri" a ground chickpea and spiced bread which has a nice "kick" for those who want "the spice". Along with this bread you have a choice of four meats,curry chicken,goat (bone-in),lamb and stew beef,and the vegetarian chana and aloo (curried potatoes and chickpeas)are all magnificent in taste. With its perfect texture and a nice spice,with a very delightful salad with a vegan free dressing, makes this one meal a must have. Now for the spice in you, then the spicy" jerk chicken" is a must, the fried rice and salad gives the palate a fullfilled delicacy.Of course a meal is not complete without a beverage.So stop on in and try their famous rum punches in flavors of sorrel,citrus,ginger,pineapple and now the mauby rum punch,is perfect for that early evening drop in from a hot day.A nice combo of fruits and spice and the taste of rum give each one a unique flavor of its own. Along with the punches are the peanut punch, a milk based (non-alcoholic) drink gives the spicy jerk chicken a nice tone down. Ginger beer,sorrel, and mauby,make it a difficult but great choice of drinks. Ever in the mood for seafood?, check out Sundays at Pam's, where the special is fried tilapia along with sweet fried plaintains two coconut bake( two pita sized pan fried sweet bread) and the "Pam's secret sauce is a have, so come and enjoy. For dessert try the cassava pone,which is the taro root shredded with coconut with a banana bread like consistency served hot with a scoop of coconut ice cream is a perfect finish.What also makes this place great is the last Saturday of each month Caribbean Party.Dj Kuhnex lay downs the tracks of soca,dancehall,reggae,calypso,and world music,turn Pam's into the perfect island getaway.Oh,bye the way,i cook there!

Never thought,

That the time would go by so fast!I can't believe that seven months just zoomed by!But the time was well spent and i learned alot!Meeting and making new friends,trying new food,picking up new language along the way,the beautiful scenery,architecture etc.It has been an phenomenal time here in Europe and looking forward to seeing more in the future.But most of all i got be with my girl despite she was in school,i got to see her lovely face everyday and enjoyed of minute of it!This winter will be my last in the US.I plan to move to Germany next summer with a plan to cook of course and see more of northern europe.To put my hard earned money towards this trip or taking more trips in the future has been more than a blessing.It's been an inspiration,educational,cultural,and culinary experience!
